This simple meal is ready with a handful of ingredients, just grab fresh carrots, potatoes, cabbage, and corned beef. Although in America, the corned beef came along with a spice mix packet; but today I am going with a homemade spice mix for corned beef.

The corned beef and cabbage instant pot recipe is a classic American-Irish comfort dish that is served on St.Patrick' Day. The delicious and juicy meal is a perfect combo of tender beef, carrot, cabbage, and potatoes with a kick of spice mix made with mustard, bay leaves, and allspice berries.

Equipment

  • Instant Pot

Ingredients
  

  • 4 Pound Corned Beef
  • 1 Onion
  • 4 Garlic Cloves
  • 4 Potatoes
  • 4 Carrots
  • 1 Head Cabbage cut into wedges
  • 4 Cups Beef Broth

For Spice Mix

  • 1 Tsp Mustard Seeds
  • 2 Bay Leaves
  • 6 Allspice berries
  • 1 Tsp Salt
  • 1 Tsp Black pepper

Instructions
 

  • Start by washing the corned beef under tap water then pat dry with a kitchen towel.
  • Cut the onion, potatoes, carrots, and cabbage into wedges and peel off the garlic cloves.
  • Put the onion and garlic in instant pot.
  • Then in a heated skillet, brown the corned beef for 10 minutes on each side.
  • Then sautee the veggies in the same skillet for 2 minutes.
  • Place the corned beef over onion and garlic in the instant pot.
  • In a bowl mix salt, black pepper, allspice berries, bay leaves, and mustard seeds.
  • Sprinkle this spice ix over corned beef, then pour beef broth into the pot.
  • After securing the lid set the instant pot to manual high pressure for 90 minutes.
  • After 90 minutes, release the pressure and remove the corned beef from the pot.
  • Then add veggies into the pot and set them to manual high pressure for 5 minutes.
  • After 5 minutes, release the pressure and take out the veggies and remaining broth.
  • Slice the corned beef against the grain and serve with cooked carrot, cabbage and potatoes.
