  • 2 packs Boursin Cheese
  • ½ Cup Red Cherry Tomatoes
  • ½ Cup Yellow Cherry Tomatoes
  • ½ Cup Orange Cherry Tomatoes
  • ½ Cup Grape Cherry Tomatoes
  • 2 Tsp Garlic minced
  • ½ Cup Spinach
  • 2 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 1/2 Cup Heavy Cream
  • 2 Tsp Peri Peri Seasoning
  • ½ Tsp Garlic Powder
  • ½ Tsp Onion Powder
  • ½ Tsp Dried Oregano
  • ½ Tsp Chilli flakes
  • 1 Tsp Salt
  • 2 Tbsp Parmesan Cheese
  • Fresh Basil chopped

Instructions
 

  • Preheat the oven to 190°C.
  • Start by boiling pasta according to the package instructions in hot water over medium flame until 60% done. Once the pasta is ready, rinse it through tap water to stop the cooking process then drain and set it aside.
  • In an oven-safe casserole, arrange tomatoes and add minced garlic. Then put cheese rounds in the center of the tomatoes.
  • Pour heavy cream and olive oil over the tomatoes and add butter to the casserole.
  • Then sprinkle seasonings over the tomatoes.
  • Bake it for 20-25 minutes. Once the tomatoes are done, add pasta and spinach to the casserole and toss them to combine together. Bake it for another 10 minutes and then take it out from the oven and let it rest for 5 minutes.
  • Garnish with freshly chopped basil and parmesan cheese then serve it hot and enjoy.
