These chilli wings recipe is from Chinese cuisine, specially from Szechwan cuisine. The Szechwan cuisine is famous for its perfect balance of spicy and savoury flavours. The chinese chilli and salt wings is a staple food in Chinese cuisine but with its perfect and addictive flavour it become famous not only in Asian Fusion cuisine but also in America. The dish is widely famous in Asian and American restaurants. You can enjoy this tasty appetizer for get to gathers and picnics.

The traditional dish involves deep frying but for a healthy twist you can air fry chicken wings or you can also bake them. I enjoy traditional method of deep frying to get more juicy and flavorfull bites. The Chilli and salt chicken wings is so simple and easy to make, just season and then coat them in cornflour before frying. Chicken wings are my all time favourite and I love to update traditional recipes. So, today I share my version of Chinese chilli and salt chicken wings, that are crispy outside and juicy inside. What You Will Need

Chicken Wings: Chicken wings with skin is recommended for this recipe. I get chicken wings and cut them in flats and drumettes. Pre cuts of wingettes are avaliable in many stores so, you can get them for chilli and salt chinese chicken wings.

Rice Vinegar: I am using Halal rice vinegar in the recipe for marination, but you can substitute it with white vinegar.

Sesame Oil: Sesame oil is must have in Chinese recipes to enhance the aroma and taste hence I am using semsame oil in marination of chicken. Also I will use sesame oil for tossing the fried chicken in chillies and garlic.

Soy Sauce: Soy sauce is used along with other spices to marinate the chicken wings. It will boost up the aroma of chinese chicken wings.

Spices for Marination: For marinartion I am not using too much of spices. As I want a mild taste of spices in marination, I am using garlic powder, black pepper powder, and salt to marinate the chicken wings. However, you can spice it up with paprika and red chilli flakes.

All-Purpose and Corn Flour: Equal amount of all-purpose flour and corn flour is required for preparing a coating.The all-purpose and corn flour coating will also make chicken wings crispier. The crispy skin texture of chicken wings depends on the coating, and I will share a secret coating mixture with all of you for crispy chicken wings.

Chicken Broth: The secret coating mixture will need chicken broth. It will taste up the flavours in the chicken, and make it juicy inside. If you don’t have a chicken broth then you can mix chicken cubes or chicken powder in a cup of water and use this.

Green Onions: Scallions or green onions are used in the recipe to make it a perfect chinese appetizer.

Garlic: Chopped garlic is saute in oil and chicken wings are tossed in it. The taste of garlic with fried chicken is a perfect match.

Chillies: The choice of chillies depends on your taste. If you want spicy wings then use green and red chillies. But you can use jalapenos for a mild flavour.

Cilantro: Chopped cilantro is use for garnishing the fried chicken wings. It will add color and aroma to the dish.

Cooking Oil: For deep frying chinese chicken wings I use vegetable oil. You can use olive oil, sunflower or any other according to the preference.

Step By Step Directions

Step1- Cut Chicken Wings

  • Start with cutting chicken wings into flats and drumettes. Discard the top of the wings.

Step2-Marinate Chicken

  • Now put the chicken wings in a wide bowl then add rice vinegar, soy sauce, sesame oil, salt, black pepper powder, and garlic powder.
  • Give it a good mix to combine well. Then leave it aside for atleast 1 hour and 30 minutes.

Step3-Prepare Coating Mixture

  • In another bowl, add corn flour, all-purpose flour, and chicken broth in a bowl.
  • Mix it using a spoon to make a thick consistency paste.

Step4-Dip Chicken Wings

  • Now dip the marinated chicken wings into the prepared coating mixture.
  • Then one by one coat each chicken wings and make sure not a single inch of the chicken wings left uncoated.

Step5-Deep Fry Chicken

  • In a frying pan, pour vegetable oil and heat it on medium low flame.
  • Deep fry chicken wings in 140°C heated oil for 7-8 minutes. After 5 minutes of frying flip the pieces for even frying.
  • Once fried, drain it on a wire rack.

Step6-Stir Fry Chicken

  • Heat a table spoon of sesame oil or olive oil in a pan.
  • Then add chopped garlic and saute for a minute.
  • Now add chopped chillies and saute them for a minute.
  • Then toss chicken wings in pan, and stir fry for 2 minutes.

Step7- Garnish

Finally, garnish the chinese chilli and salt chicken wings with chopped spring onions and chopped cilantro.

Tips That will Help

  • For better results marinate chicken overnight in refrigerator.
  • Deep fry chicken in small batchesand avoid over-crowding the pan.
  • Use thermometer to check the temperature of oil. When frying on right temperature chicken gets a perfect crisp.
  • You can double fry chicken wings for better results. Fry for 4-5 minutes at 140°C. Then take it out and let them rest for 4 minutes. Again deep fry for 4 minutes at 160°C.
