Gluten Free All-Purpose Flour: I am using Gluten free all-purpose flour. You can substitute it with whole wheat flour or rice flour. If you don’t have gluten sensitivity you can use normal flour.

Almond Flour: It elevates the nutty flavor of the cake. If you don’t have almond flour you can grind 2 cups of almonds and use these almond crumbs instead of almond flour.

Fresh Cherries: I am using fresh cherries for the cake but you can use canned or frozen cherries. While using fresh cherries make sure to de-stone the cherries.

Almonds: I use almonds in cake batter also I add them as topping on cake. So you need a lot of almonds and cherries for this cake.

Yogurt: Yogurt is a secret ingredient in this recipe. The fat content in the yogurt makes the cake super moist.

Cinnamon: A teaspoon of cinnamon powder will kick the aroma and warmth in the cake.

Brown Sugar: I prefer to use brown sugar to add a rustic touch to my cake. But it is optional, you can use regular sugar.

Salt: Salt is used to balance the sweetness of the cake.

Gluten Free Baking Powder: I am using a gluten free version of baking powder, but it also depends on the preference. You can use a regular one.

Eggs: The fluffy texture of cake is achieved by eggs, as I am using gluten free flour and baking powder that’s why I use 3 large eggs in the recipe. You can use 2 eggs if you are using regular flour.

Almond Extract: Almond extract adds fragrance to the cherry almond cake. You can use vanilla extract instead of almond extract.

Olive Oil: I use olive oil for making this cake, You can use melted butter or even vegetable oil.

Step By Step Directions

Step1- Prepare Almonds and Cherries:

  • Take a small knife and cut the cherries in two halves in this way you can easily de-stone them.
  • Then slice the almonds in two halves. You can use whole almonds but I like to slice them.

Step2- Mix Dry Ingredients:

  • Take a mixing bowl and add flour, almond flour, baking powder, brown sugar, cinnamon powder, and salt.
  • Then combine them all using a hand whisk.

Step3- Mix Wet Ingredients:

  • In another mixing bowl, crack eggs and whisk them well.
  • Then add yogurt, and olive oil and whisk them all together.

Step4- Make Cherry Cake Batter:

  • Once the dry and wet batter is ready, it’s time to incorporate the dry batter into the wet batter.
  • Gradually add dry batter into wet batter and mix them until a smooth consistency.
  • Then fold in fresh cherries and sliced almonds.
  • Slightly mix them until well incorporated.

Step5- Bake the Cake:

  • Preheat the oven to 170°C.
  • Then grease the cake pan with oil or butter.
  • Pour the batter into the pan and tap to remove air bubbles.
  • Then again add sliced almonds and cherries on the top.
  • Then bake for 35-40 minutes.
  • After 40 minutes insert a toothpick into the center of the cake if it comes out clean then it’s done.
  • In another case, you can bake it for more 5 minutes.

Step6- Serve:

  • Once the cake is ready, place it on a wire rack for 5-10 minutes or until cools down.
  • Then drizzle maple syrup on top of it. It’s optional you can brush the cake with melted butter.
  • You can serve it with ice cream, tea, coffee, or even with hot chocolate.

  • You can recreate this recipe with different fruits like blueberries, raspberries, and even oranges.
  • A variety of nuts can be used to replace almonds. Like pistachios, cashews, and walnuts.
  • Use high quality flour for cake.
  • Avoid using an electric whisk as it will overmix the batter.
  • Place a butter paper in a baking pan and also cover the inner side of the pan with butter paper to avoid burnt cake sides.
